Banana Oatmeal Bake


This banana oatmeal bake was a lifesaver for me during this first trimester of pregnancy! An added bonus is that my kids and husband thoroughly enjoyed it too! This was very easy to make and it's also easily customizable for your fam. If you aren't big prune eaters, you can omit those and if you want to make this more of a treat, you could add chocolate chips. I'll definitely be making this time and again. Enjoy!

INGREDIENTS​:

  • 2 1/4 c. old-fashioned oats

  • 2 tbsp. flax seeds

  • 2 tbsp. chia seeds

  • 1 tsp. baking powder

  • 1/2 tsp. ground cinnamon

  • 1/4 tsp. salt

  • 3 ripe bananas, mashed

  • 3/4 c. unsweetened vanilla almond milk

  • 1/4 c. maple syrup

  • 1 egg

  • 1 tsp. vanilla extract

  • 2 prunes or 1/3 c. pitted dates (optional)

INSTRUCTIONS:

  1. Combine all ingredients in a bowl and mix thoroughly.

  2. Pour into an 8 inch square glass dish and bake at 350 degrees for about 35 minutes.

  3. Store in the refrigerator in an airtight container for up to 1 week.

NUTRITION:

*Makes 16 small servings.
Per serving: 97 calories; 18g Carbs, 2g Fat, 3g Protein
