Spinach and Cheese Stuffed Chicken Breast

I've been excited to share this delicious chicken dish since the night I first tried it; it is so good! This can be made in 30 minutes or less and can be made all in one pan, so it definitely would be a great weeknight option. Don't be intimidated by the stuffing part; you'll simply just be slicing the chicken on the top half of the breast and stuffing with the goods. It is easy, I promise! And if goat cheese isn't your favorite, most any cheese will do. Hope you enjoy! Avocado Blueberry Quinoa Salad

I've been enjoying this easy and flavorful salad for lunches the past several weeks! It packs big flavors between the creamy avocado, feta, juicy blueberries, and tangy cilantro dressing. I put it together over the weekend and it stayed fresh in the fridge all week! I paired it with chicken to add a bit more protein at my meals. Enjoy! Baked Pizza Chicken

This recipe had me at "pizza"! What a wonderful way to enjoy the flavors of pizza with so much more protein! This is definitely going into my rotation of easy weeknight meals; I prepared it in under 30 minutes and there's only 8 ingredients involved!
