Having a hard time getting your veggies in? Try making this dairy-free ranch to dip them in! This recipe is comprised of minimal ingredients and is very easy to make. The total prep time is less than 10 minutes! I plan to take this to many barbecues this upcoming summer. Enjoy! INGREDIENTS​: 1 egg 1 c. LIGHT olive oil 1 tbsp. lemon juice 2 tbsp. red wine vinegar 1 tsp. sea salt 1 tsp. pepper 3/4 tsp. onion powder 3/4 tsp. garlic powder 1/2 c. full fat coconut milk, blended 3 tbsp. dried parsley INSTRUCTIONS: Use an immersion blender to combine all ingredients (except spices) in a mason jar. This hearty and delicious meal is made all in one pan and can be whipped up in 30 minutes! Pair it with Brussels sprouts and/or sweet potatoes and you've got a meal! Enjoy! This recipe has come to the rescue multiple times when I have been in need of something sweet! I have also been guilty of having multiple avocados that are ripe and ready to use at the same time! This breakfast hash is the perfect combination of sweet and savory. It whips up quickly and stores well for the week, if you're a weekend food prepper.
