High Protein, Three Ingredient Pancakes



A healthy spin on pancakes and only 3 ingredients? Sign me up! Because these are low-carb and gluten-free, they aren't quite as fluffy as traditional pancakes, but I promise--they taste just as delicious! These remind me of crepes and can be customized with whatever toppings you choose or eaten plain. Enjoy!

INGREDIENTS​:

  • 12 tbsp. egg whites

  • 2 medium bananas

  • cinnamon

INSTRUCTIONS:

  1. Mash the bananas with a wooden spoon and then add the egg whites and cinnamon. Whisk everything together until the mixture becomes smooth.

  2. Heat a medium skillet over low-to-medium heat. Spray with a healthy cooking spray (olive oil, avocado oil, or coconut oil).

  3. Pour about 1/4 c. batter into the skillet and cook for about 1-2 minutes on each side or until the mixture begins to bubble and the edges turn golden brown.

*Makes 2 servings.
Per serving: 158 calories; 28g Carbs, 0g Fat, 11g Protein
