Cucumber and Black Bean Salad


This is the perfect summer salad! It's light and refreshing and would go great with food on the grill and maybe some corn on the cob! I paired it with pulled pork last week and it was the perfect! It lasts for several days in the refrigerator so make it over the weekend and serve it all week! Enjoy!

INGREDIENTS​:

  • 15 oz. can black beans

  • 1 cucumber

  • 1/3 red onion

  • 1/2 c. cilantro

  • 1/2 c. feta cheese

  • 2 tbsp. olive oil

  • 2 tbsp. apple cider vinegar

  • 1/2 tsp. ground cumin

  • 1/8 tsp. garlic powder

  • 1/4 tsp. salt

  • 1/4 tsp. black pepper

INSTRUCTIONS:

  1. Soak the red onions in ice water for 5 minutes. This reduces the strength of the onions' flavor.

  2. Rinse and drain the black beans in a colander. While they drain, finely dice the cucumber, red onion, and cilantro.

  3. In a small bowl, combine the following ingredients: olive oil, apple cider vinegar, cumin, garlic powder, salt, and pepper.

  4. Add the black beans, cucumber, red onion, cilantro, and feta to a large bowl. Stir well to thoroughly combine and then add the dressing, folding the ingredients together. Allow the salad to marinate for at least 10 minutes before serving. Store in the refrigerator up to 5 days.
