Sloppy Joe Bowls
If you're looking for a quick and easy weeknight dinner, look no further! These Sloppy Joe Bowls take me right back to my childhood, but without all the added ingredients. These pack big flavor, but are made with all real, whole food ingredients. This meal is Whole30-approved! Enjoy!
INGREDIENTS:
1 lb. ground beef (or turkey)
1/2 c. white or green onion, chopped
3/4 c. green pepper, chopped
8 oz. can tomato sauce
1 tbsp. tomato paste
1 1/2 tbsp. apple cider vinegar
1 tbsp. Dijon mustard
1/2 tsp. minced garlic
1/2 tsp. dried parsley
1/2 tsp. salt
5 medjool dates, pitted
2/3 c. water, reserved
2 russet potatoes, diced
INSTRUCTIONS:
Heat oven to 400 degrees. Roast diced potatoes for 20-25 minutes, until slightly brown.
Meanwhile, brown the meat over medium heat in a pan on the stove. Add in onions and green pepper. Drain any excess grease.
Add in apple cider vinegar, Dijon mustard, garlic, parsley, and salt. Stir well to fully combine.
In a separate small pot, bring 2/3 cup of water to a boil. Add the dates and boil for 30-60 seconds, just long enough to soften them slightly. Remove the dates and save the water.
Place the dates, tomato sauce, and tomato paste in a food processor or blender. Blend well and then add to the cooked meat.
Add 2 tbsp. of the reserved water to the meat.
Serve the meat mixture over the diced potatoes.
