One Pan Pork Chops with Apples and Onions


This hearty and delicious meal is made all in one pan and can be whipped up in 30 minutes! Pair it with Brussels sprouts and/or sweet potatoes and you've got a meal! Enjoy!

INGREDIENTS​:

  • 2 tbsp. olive oil, divided

  • 3, 4 oz pork chops (I prefer bone-in, but you can use boneless if you'd like!)

  • 3/4 c. chicken broth

  • 1 tsp. dijon mustard

  • 1 tbsp. sage

  • 1 1/2 tsp. rosemary

  • 1/2 tsp. thyme

  • 1/2 tsp. sea salt

  • 1/4 tsp. black pepper

  • 2 medium gala apples, thinly sliced

  • 1 small red onion, thinly sliced

INSTRUCTIONS:

  1. Heat 1 tbsp. of olive oil in a large pan over medium-high heat.

  2. Lightly season both sides of the pork chops with salt and pepper and add them to the pan, making sure they are not touching one another. This ensures they cook evenly. Sear for about 3-5 minutes on each side.

  3. Remove the pork chops from the pan and place them on a plate to rest.

  4. In a small bowl, mix together the dijon mustard and chicken stock. Set aside.

  5. Heat another tablespoon of olive oil in the pan and slowly add the apples and onions. Season with sage, rosemary, thyme, sea salt, and black pepper. Stir well to make sure the spices full incorporate with the apples and onions.

  6. Pour the stock mixture over the apples and onions. Use a wooden spoon to scrap the pan to release any flavor bits into the mixture.

  7. Add the pork chops back to the pan, nestling them around the apples and onions. Cook for about 5 more minutes or until the pork has cooked completely and the liquid has reduced by about half.
