Peanut Butter Protein Bars

I am always seeking new recipes that incorporate protein powder and this one really nails it! These are very simple to make and are so delicious! My whole family enjoyed them and we all found it very difficult to just have one!


  • 1/2 c. natural peanut butter (Ingredients should read: peanuts, salt. I use Crazy Richard's brand.)

  • 2 tbsp. coconut oil

  • 1/3 c. honey

  • 1 tsp. vanilla extract

  • 2/3 c. vanilla protein powder (I used Optimum Nutrition brand; 2 full scoops.)

  • 1 c. oats

  • 2 tbsp. chia seeds

  • Optional: 1/3 c. unsweetened shredded coconut flakes (I used this! Be sure to get unsweetened!)

  • Optional: 1/3 c. dried cherries (I used this!)

  • Optional: 2 tbsp chocolate chips + 1 tsp. coconut oil for drizzle (I did not use this.)

  • Sea salt, for sprinkling


  1. Heat the following ingredients in a sauce pan over low heat: peanut butter, coconut oil, honey, and vanilla. Stir ingredients together until they are completely smooth. Then, remove from heat and transfer to a large mixing bowl.

  2. Stir in protein powder, being sure to fully incorporate into the mixture. Slowly add in the following ingredients: oats, chia seeds, and cherries/coconut flakes (if using).

  3. Line a 9x9 pan with parchment paper and transfer ingredients to the pan, pressing down to make sure it is even throughout.

  4. If drizzling with chocolate, add chocolate chips and coconut oil to a small sauce pan. Heat over low heat until the chocolate is completely melted and drizzle on top of the bars.

  5. Sprinkle with sea salt and place in the fridge for 1 hour before cutting. Store the bars in the fridge in an airtight container for up to 2 weeks.
