Pumpkin Protein Energy Balls


These no bake Pumpkin Protein Energy Balls are delicious and make for a super quick, festive treat! I've been keeping mine in the freezer and enjoying with a cup of warm coffee. The best part about these? They're made from only a few ingredients and all you need is a food processor! Hope these bring some joy to your holidays this year!

INGREDIENTS​:

  • 5 tbsp canned pumpkin

  • 3/4 c dates (about 15)

  • 1/8 c coconut flour

  • 5 tbsp almond butter (or the nut butter of your choice)

  • 1.5 servings collagen (or the protein powder of your choice)

  • 3/4 tsp pumpkin pie spice

  • pinch of salt

INSTRUCTIONS:

  1. Place the dates in a food processor or high-speed blender. Pulse a couple times so they break down into several small pieces.

  2. Add the remaining ingredients and blend until smooth and dough-like.

  3. Form the dough into equal size balls and refrigerate for 10 minutes or until chilled. Store in the refrigerator or freezer.
