The BEST Crockpot Whole Roast Chicken

This may be the easiest recipe I have in my collection...perfect for a Manic Monday like today! Simply add the ingredients to the crockpot, season, and wait for the delicious aroma to fill your home! I typically make this early in the week and then use the leftover chicken for salads later in the week. Whole30/Paleo approved! Enjoy!

INGREDIENTS
  • 1 whole, organic chicken (about 4-5 lbs)

  • 2 tsp Celtic salt

  • 1 tsp organic white pepper

  • 1/2 tsp organic black pepper, freshly ground

  • 1 tsp organic cayenne pepper

  • 2 tsp organic paprika

  • 1/2 tsp organic garlic powder

  • 3 sprigs of fresh rosemary (or 1 tsp dried rosemary)

  • 1 large onion, loosely chopped

  • Carrots

  • Potatoes

INSTRUCTIONS

  1. Combine all spices in a small bowl and set aside.

  2. Remove the giblets from the chicken.

  3. Put onions in the bottom of the crockpot. (Don't add liquid. The onions keep the chicken from sticking to the bottom and will add a bit of moisture to the chicken.)

  4. Add chicken, carrots, and potatoes to the crockpot.

  5. Rub the top and sides of chicken with spices.

  6. Cook on low for 5-6 hours.

  7. When done, check to make sure chicken is cooked all the way through.

  8. Save the liquid and bones from the chicken to make a delicious bone broth later. I do this right after I make this chicken to get double time out of my crockpot before I put it away.
